Maceration of red and white must is a crucial step for producing high-quality red and white wines, allowing the extraction of exceptional flavors and colors.
This process is facilitated by the Lavinox vertical vinifier, available in sizes from 3,000 L to 12,000 L. Constructed from AISI 304 stainless steel, the tank minimizes manual labor, enabling a rational and continuous workflow that can operate day and night.
The tank features a central mixing system with robust mixing blades, powered by a motor located at the front of the mixing tank, it also has a Heat transfer jacket that can hold the temperature of it's content with a precise temperature control, ensuring even maceration and fermentation throughout the batch.
Additionally, the mixing tank can be used as a storage vessel for wine during the remainder of the year, providing a versatile, hygienic, and efficient solution for wineries.
  • The tank is equipped with a central mixing system with blades, designed to separate seeds from the must as an added benefit. This system also assists with emptying, ensuring efficient handling of the must.

  • Filling and emptying the must is simple and fast through a large bottom ball valve, making operations smooth and time-efficient.

  • The fermentation process can be managed via electronic control, allowing selection of the desired fermentation program according to grape variety and processing requirements. Control can be automatic or manual, offering full flexibility.

  • The double jacket allows precise temperature regulation, ensuring optimal fermentation conditions and the possibility to adjust heating or cooling as needed.

  • The fermentation tank is mobile, equipped with four wheels to have the ability to be moved into processing hall. Before filling, the wheels must be replaced with leveling supports, and pads.
